The vines are planted on the stony slopes of the hil of the village of Chardonnay. The soil is made of a thin slide of clay over limestone. Chardonnay obliges, the grape variety is completely dedicated to Chardonnay.
The vines were planted between 1947 and 1983. Our policy to obtain moderate outputs, the quality of the soil as well as the age of the vines contribute to get grapes with a rich blend of flavors and aromas.
Bunch of grapes are hand picked at full maturity. In order to preserve the grapes until pressing, they are collected in small 30 kg cases and carried by truck to the winery. That process authorizes a sizeable cut in sulphite use, its excesive use being responsible for many headaches.
The same concern for the grapes guides the press operations. The grapes are pressed during several hours with low pressures in a pneumatic press of small capacity. Each parcel is hand picked, pressed and vinified separately.
