Grapes are hand picked at full maturity. In order to preserve the grapes until pressing, they are collected in small 30 kg cases and carried by truck to the winery.
That process authorizes a sizeable cut in sulphite use. Its excesive use is being responsible for many headaches.
The same concern guides the press operations. The grapes are pressed during several hours with low pressures in a pneumatic press of small capacity. Each parcel is hand picked, pressed and vinified separately.
